Easy dal fry recipe


Dal fry is one of the most popular dal recipe in India. It can  be prepared either with toor dal (thuvaraparippu) or with splitted green gram.  Here we are preparing the easiest and tastiest version of dal fry.  In 20 to 25 minutes, we can prepare this dish. It can serve with rice, chappathi, roti, naan, parotta etc.. So, let's start?




Ingredients:


For pressure cooking the dal:

Toor dal / thuvaraparippu         - 1/2 cup

Water                                        - 1.5 cup for cooking the dal in pressure cooker


Other ingredients:

Onion                     - 1 medium sized (finely chopped)

Green chilly           - 2 (slit or chopped)

Tomato                  - 1 medium sized (finely chopped)

Dried red chilly    - 2 to 3 (cut into two or three pieces)

Curry leaves         - 1 spig

Ginger garlic paste - 1.5 teaspoon

Cumin seeds            - 1 teaspoon

Mustard                   - 1 teaspoon

Asafoetida powder - 1 or 2 pinch

Turmeric powder   - 1/2 teaspoon

Red chilli powder - 1/2 teaspoon

Garam masala powder - 1/2 teaspoon

Kasuri methi               - 1 teaspoon

Oil / unsalted butter / ghee - 2 to 3 tablespoon

Coriander leaves for seasoning

Water as required

Salt as required




Preaparation:



> Wash toor dal thoroughly and put in the pressure cooker and add 1.5 cup water and a pinch of turmeric powder and cook in high flame for 1 whistle and reduce the flame and cook for 3 to 4 whistles or until the dal is cooked

> Once the dal is cooked, mash the dal lightly with a wired whisk or with a spoon and keep it aside

> In a pan, pour oil / ghee / unsalted butter and splutter mustard

> Then add cumin seeds and fry them

> Add onion and fry till they become transparent or light brown

> Add ginger garlic paste and fry for some seconds till the raw aroma goes

> Add dried red chilly, green chilly, curry leaves and stir

> Add the powders ( turmeric, red chilly, garam masala, asafoetida) and fry for a second

> Add tomatoes and stir well and allow it to cook till the tomatoes become soft and mash it well 

> Add mashed dal into it and stir well, add water if required, add salt and stir well and cook for 4 to 5 minutes

> Dal fry should be in thick or medium consistency, so do not add too much water and spoil the taste

> Add kasuri methi and stir well and switch off the flame


> Add chopped coriander leaves and serve hot (add some ghee or butter if required)

Caramel Custard / Flan / Caramel pudding without oven recipe


Caramel custard is one of the favorite dessert items in our home.  My hubby and kids love to eat this dish every now and then.  My daughter is against egg (she won't eat in any form), so i am using caramel custard or cake dishes to make her eat egg (as a toddler, she doesn't know the content for now ) :-)

Here, i am introducing an easy to prepare version of caramel custard / Flan recipe.  This recipe is without using oven recipe. So everyone can try this recipe at home very easily. The taste will also be very yummy. Let's start?




Ingredients:


Milk                             - 1 packet or 500 ml

Sugar                           - 1/2 cup or less (as per sweet required)

Egg                             - 4 numbers

Corn flour                  - 1 tablespoon

Vanilla essence          - 1 teaspoon

Sugar for caramelizing - 3 tablespoon



Preparation:



> For making caramel, use the same pan for making pudding,  put 3 tablespoon sugar and place it on the stove

> Keep the flame to the lowest when it starts changing colour to brown.  When the melted sugar become dark brown color switch off the flame and swirl the pan with tongs and keep it aside

> Take 1/4 cup milk in a cup, and put cornflour onto it and mix well till it become watery without any lumps and keep it aside

> To make the custard, in a blender, take eggs, sugar and vanilla essence and blend for a minute


> Add the remaining milk and blend for one more minute and then add the cornflour milk into this and mix 

> Pour this into the prepared custard pan

> Boil water in a steamer, and place the custard pan in the steamer, close the lid. 

> Once steam comes, simmer for 10-12 minutes and switch off the flame and leave it for 5 more minutes.

> Open the lid and allow it to cool down to the room temperature

> Keep in fridge, preferably overnight

> Serve chilled

Ari murukku / Rice Chakli / Murukku / Kerala murukku recipe


Here is the recipe:

Ingredients:


Rice flour                           - 2 cups

Uzhunnu flour                   - 1 cup

Ghee                                  - 2 teaspoon

Salt as required

Boiled water  as required

Black sesame seeds         - 1 teaspoon

Cumin seeds                    - 1 teaspoon

Oil for frying


Preparation:


> Here we are using fried rice flour and fried uzhunnu (urad dal) flour for making murukku.

> You can prepare urad dal flour, by frying the urad dal in a pan and powder it using a mixer grinder

> Then in a mixing vessel, take rice flour, urad flour, ghee, salt, sesame seeds and cumin seeds, and mix well and make a dough (as idiyappam or nool appam consistency) using boiled water.

> Use a star mould in idiyappam maker, and put the dough into it

> In a bottom thick pan, pour oil for frying and when it become hot, press the idiyappam maker and each murukku into the oil and fry both the sides till it become golden brown colour

> Ari murukku is ready to serve

> After cooling down, keep it in a container for minimum one week

Easy Rava Dosa recipe


Rava dosa is a crispy dosa made with rava, rice flour etc., The main advantage of rava dosa is that no need to ferment the batter overnight. We can prepare this dosa instanly within 15 minutes of making batter. So let's start to prepare easy rava dosa today? Here, is the recipe:




Ingredients:


Rava / Sooji / Semolina           - 1/2 cup

Rice flour                                 - 1/2 cup

Maida / all purpose flour         - 1/4 cup

Cumin seeds                            - 1 teaspoon

Green chilly                            - 1 (finely chopped)

Carrot                                     - 2 tablespoon (grated / finey chopped)

Ginger                                     - 1/2 teaspoon (grated / finely chopped)

Curry leaves                           - 5 -6 (finely chopped)

Coriander leaves                    - 2 tablespoon (finely chopped)

Onion                                     - 1 (finely chopped)

Water                                     - 2 1/2 cup or more

Oil for roasting dosa

Salt to taste



Preparation:


> In a mixing bowl, take rava, rice flour, maida and add salt and water and mix well with a spoon or whisk with a wire until there are no lumps

> Add cumin, grated carrot, ginger, green chilly, curry leaves, coriander leaves, onion and mix well

> Add water until the batter consistency become buttermilk like consistency (not as normal dosa batter). Cover the bowl and keep it for 20 minutes. After 20 minutes again check the consistency and add more water if needed.




> Heat a non stick dosa tawa over medium flame. Ensure that tawa is hot, otherwise the batter will stick to the pan and dosa will not come out well.  Check the hot by sprinkling some water on it. If water drops evaporate immediately, tawa is ready to prepare dosa.

> Take a ladle / spoon full batter and pour from about 3-4 inch height on in a circular motion starting from edge to centre



> Pour the batter until it covers the centre. Maintain some holes here and ther. Those holes allows steam to escape and make dosa crispy.

> Sprinkle 1/2 teaspoon oil around edges of dosa. Cook until it turns light golden brown and crispy, for around 2 minutes.

> Turn and cook the other side too




> Crispy rava dosa is ready to serve along with chutney and sambar :-)

How to make soft idli or dosa?


Are you really worried about your idli and dosa preparation at home, as it is hard?

Don't worry, here is the solution.  Really i was also worried once my idli and dosa become so hard and my kids and husband didn't have breakfast.  I started experimenting each and every possible ways to prepare idli and dosa in soft.  

Thus, one day i just added a handful of aval or rice flake into the mixer grinder, after grinding rice and urud dal.  Then added a little bit of water and prepared a paste and added this paste along with the idli batter and mixed well and kept for fermentation.

The very next day, when i prepared idli that was very soft as sponch.  After that my husband and kids started eating lovely dosa and idli with much more love.  

You can also do the samething to make your idli and dosa to become soft. Try this out and let me know the result.  I am sure you will write back in my comment box, because of the result. 


So, once again add a handful of aval or rice flake paste along with the batter and keep it for fermentaion. You can prepare soft dosa and idli with this batter.

Custard drinks


This is a drink with custard.  This recipe is very easy to prepare and tasty. Here is the recipe:-

Ingredients:


Custard powder                - 1/4 cup

Milk                                  - 1/2 litre (one packet)

Sugar as required

Ghee                                 - 1 teaspoon

Cashew nuts                    - 10 (crushed or chopped into small pieces)

Vanilla essence                - 1/2 teaspoon

Water                               - 1/2 cup


Preparation:


> In a cup, take 1/2 cup water and put the custard powder into it and mix well and keep it aside

> In a vessel, heat the milk to boil, before boiling add custard mixture into the milk and allow it to boil (stir well), and add sugar and stir well and switch off the stove.

> In a pan, heat ghee and fry cashew nuts.  After cooling down put into the custard milk and stir well.

> Add vanilla essence and stir well and serve hot or cool

> If the drink is too thick, add more water and adjust sugar

> Custard drink is ready to serve

Watermelon Juice recipe

Watermelon                        - 2 cups (pieces)

Milk                                    - 2 cups (boiled and chilled)

> Add ice cubes and just blend

> Pour into a glass and serve cool

> Watermelon juice is ready

Idiyappam with wheat powder recipe


Idiayappam (my son's version - noodles appam) is a breakfast or evening snack item in Kerala. Mostly we prepare idiyappam with rice flour. Here, i wish to introduce a tasty and soft idiyappam with wheat powder. Let us start?



Ingredients:


Wheat flour                          - 2 cups

Rice flour                             - 1/2 cup

Salt to taste

Ghee                                    - 1 teaspoon

Grated coconut                   - 1/2 cup (as required)

Water as required (boiled)



Preparation:




> In a pan, fry wheat flour for 4-5 minutes (don't over cook) and switch off the flame and allow it to cool down

> In a vessel, boil water

> In a vessel, put fried wheat flour and rice flour, salt to taste, ghee and mix well and add the boiling water and mix well 

> Keep the mixture for 5 minutes and then make a soft dough by kneading

> Then put dough into an idiyappam mould or idiyappam maker

> Take the idli mould or the vessel in which you wish to prepare idiyappam, put grated coconut 1 tablespoon and squeeze the idiyappam on the top of the grated coconut and cook in a steamer for 10-15 minutes 

> Tasty and healthy wheat idiyappam is ready to serve 

> Green peas masala or kadala curry or chicken curry is the best combination along with idiyappam

Apple milkshake recipe


Here is the easy apple milkshake recipe:-


Ingredients:


Apple                                  - 2 numbers

Milk                                   - 1 1/2 cup (boiled and chilled)

Honey                                - 2 tablespoon

Sugar                                 - 2 tablespoon

Ice cream                           - 1/2 cup




Preparation:


> Peel and remove the seeds from the apple and cut into small pieces

> In a blender, put the apple pieces and blend until it become soft, then add chilled milk, honey, sugar and ice cream and blend for a few seconds 

> Serve the apple milkshake in a glass

Suhiyan / Sukhiyan is really a healthy snack item in Kerala.  It is prepared using green gram or cherupayar parippu.  Even kids love this yummy sweet snack.  If we prepare this recipe at home, our love to eat this snack will increase.  Really a mouthwatering evening snack.  Let us prepare sugiyan or suhiyan or sukhiyan at home? Here is the recipe:-



Ingredients:


Green gram /
Cherupayar                    - 1 1/2 cup

Jaggery / sarkkara          - 1 cup (crushed)

Grated coconut              - 3/4 cup

Ghee                              - 1 tablespoon

All purpose flour / maida - 1 1/4 cup

Cardamom powder /
elakka powder                  - 1/2 teaspoom

Turmeric powder              -  a pinch

Salt to taste

Water as required

Oil for deep frying




Preparation:


> Wash and soak green gram in water for 4 hours and drain it

> Pressure cook the soaked green gram with a pinch of salt and 1 1/4 cup water.  After first whistle reduce the heat to low and cook till the second whistle, then switch off the flame and wait till the pressure settle

> After the pressure settle, open the cooker and drain the excess water if any

> In a heavy bottom pan, heat the ghee.  Add jaggery and allow it to melt well, then add coconut and mix well

> Add cardamom powder and cooked green gram to the pan and mix well

> Stir well for a minute and remove from the fire and keep it aside

> In a bowl, take maida or all purpose flour, turmeric powder, a pinch of salt and make a thick batter adding little water at a time

> Heat oil in a pan for deep frying.  

> Prepare lemon sized balls from green gram mixture and dip each ball in the thick batter and put the same into the hot oil and allow it to deep fry each sides till it become yellowish with a crispy texture

> Serve hot with tea or coffee as evening snack

Easy wheat dosa recipe / Wheat dosa / Gothambu dosa



Ingredients:


Wheat powder                             - 1 cup

Urud dal powder / uzhunnu podi - 1/4 cup

Fenugreek powder                       - 2 teaspoon

Salt to taste

Water as required

Oil to apply on pan or tawa


Preparation:


> In a bowl, mix wheat powder, urud dal powder, fenugreek powder and salt to taste and add water to prepare dosa batter

> Then keep this batter for 20 minutes

> Prepare dosa in a pan or a tawa  

> Healthy and yummy wheat dosa is ready to serve along with sambar or chutney
