Easy Tomato chutney Recipe / Thakkali chammanthi Recipe



Tomato chutney (Thakkali chammanthi) is my favourite chutney with dosa or idli or wheat dosa.  In my college days, i was staying as PG, there we used to get tasty tomato chutney along with wheat dosa. Really mouthwatering.... Today, we can prepare the same yummy and tasty tomato chutney at our own kitchen..Let's start!!!!





Ingredients:


Tomatoes (Ripe juicy)  - 2 medium sized (chopped)

Big onion                     - 1 large sized (chopped)

Dried Red chillies       - 1 to 2 numbers

Turmeric powder        - 1/4 tsp

Red chilly powder     - 1/2 tsp

Garlic                        -  2 cloves (crushed)

Ginger                       - 1 tbsp (grated)

Salt to taste

Oil                          - 2 tbsp




Preparation:


> Heat oil in a pan, add onion and dried red chilly and saute till the onion become translucent

> Add ginger and garlic and stir for some minutes

> Add tomatoes and salt  and stir for few a few minutes and cover the pan with a lid and cook till the tomatoes are become soft and pulpy

> Mash the tomatoes well and add turmeric powder and red chilly powder and stir well and cover the lid for few more minutes on low flame and adjust the salt and switch off the flame

> Allow it to cool down and then grind to get a fine paste

> Tomato chutney or thakkali chammanthi is ready to serve with idli, dosa, or wheat dosa.

Uzhunnu Vada recipe / Medu Vada / Urad Dal Fritters Recipe


Uzhunnuvada is a very popular snack item in India.  This is very tasty and healthy snack item. We can make uzhunnuvada at home very easily.  Here is the recipe:


Ingredients:


Uzhunnu / Urad dal       -1 cup

Rice flour                      - 1 tablespoon

Big Onion                     - 1/2 cup (chopped)

Ginger                           - 1 inch piece (finely chopped)

Green chillies                - 3-4 numbers (chopped)

Black pepper powder   - 1 teaspoon      

Curry leaves                 - 1 sprig

Baking soda                 - 1 pinch (optional)

Salt to taste

Oil for deep frying


Preparation:


> Wash and soak uzhunnu / urad dal for 3-4 hours

> Drain it completely and grind it to a smooth paste without adding water

> Transfer it to big bowl and add all the remaining ingredients ( chopped onion, chopped ginger, chopped green chillies, black pepper powder, curry leaves, baking soda and salt) other than oil and mix it well.

> Add rice flour and mix well, to get a crispy vada and keep it idle for 10- 15 minutes

> Heat oil in a pan and keep it in low flame.

> Wet the hand and take small portions from the dough, make round shaped balls and press it using your palm and make hole in the centre

> Drop the vada into the hot oil and fry them till it become golden brown

> Drain vada into a kitchen tissue 

> Serve hot with sambar or chutney

Butter Bun / Cream Bun Recipe


Butter bun or cream bun is a yummy snack.  From my childhood, my favorite snack.  But till this time, i used to buy the same from bakery shops.  So, i wished to experiment at my own kitchen and the result was amazing... Then i thought to share the recipe with you too. So that you can also prepare butter bun or cream bun at your own kitchen.  The method of preparation is very simple and very easy to prepare. Here, we are not using Microwave oven, so it's very easy to prepare at everyone's home. Let's Start to prepare yummy yummy cream bun?





Bun Ingredients:


Plain flour / Maida    - 2 cups

Butter (unsalted)        - 25 gm

Yeast                          - 2 teaspoon

Sugar                          - 2 tablespoon

Water to make dough like chappathi / rotti consistency

Salt 



Butter cream ingredients:


Butter                 - 40gms

Icing sugar/
Powdered sugar - 1 cup

Milk                   - 1 and a half tablespoon

Vanilla essence  - 1 teaspoon




Preparation:


> Mix all the ingredients for bun, to form a soft dough.  Cover and keep it aside for an hour. In an hour, the dough will double.

> Divide the dough into equal balls, shape into round and slightly press to flatten. Again cover and keep aside for 15 more minutes

> Heat oil in a deep pan, and fry each balls till it become golden brown (both the sides).  Drain into paper towel and cool completely.

>  By the time, we can make butter cream for filling.  Beat all the ingredients for butter cream together using an electric beater or a hand wisk or a wooden spoon until fluffy.

> After the bun cool down completely, slit each bun and apply butter cream

> Yummy butter bun or cream bun is ready to serve

Rava Idli / Instant Rava Idli Recipe


Rava idli is a south Indian breakfast or evening snack dish, which is very easy to prepare.  The specialty of the dish is no need of fermentation or no need of grinding.  As the name says this is an instant idli recipe, with healthy ingredients. Let's start preparation!!



Ingredients:


Rava / Sooji/ Semolina        - 1 cup (fried)

Curd / Yogurt                       - 1/2 cup (not sour)

Baking soda                         - 1/4 teaspoon

Carrot                                   - 1/2 cup (grated)

Green chilly                         - 2 chopped

Onion                                   - 1 finely chopped

Curry leaves                         - 1 sprig

Cashew nuts                         - 5-6 (finely chopped)

Ginger                                  - 1 teaspoon (grated)

Mustard                                - 1/2 teaspoon

Cumin Seeds                        - 1/2 twaspoon

Asafoetida                            - 1 pinch

Urad dal (splitted)               - 1/2 teaspoon

Chanda dal (split)               - 1/2 teaspoon

Ghee                                   - 1/2 teaspoon

Salt to taste

Water as required

Oil



Preparation:


>  Roast rava first.  Heat 2 teaspoon ghee or oil in a pan, and add rava and roast till they become aromatic and change color.  Keep on stirring often when roasting them.  Remove the roasted rava into a mixing bowl and keep it aside. (* if you are using roasted rava, just avoid this step)

> In the same pan, pour oil and splutter mustard and add cumin seeds, asafoetida, urad dal, chana dal, and cashew nuts and stir well till it become light brown.  Add curry leaves, green chillies, carrots, ginger and stir well for one minute and switch off the flame. And allow it to cool

> Take curd in a mixing bowl and add the roasted rava and the mixture  and mix it well and add water and salt to taste and mix well and keep the batter for 15 minutes

> After 15 minutes add baking soda and mix well and pour the idli batter into the greased idli plate

> Steam them on medium flame for 15 minutes or till the idlis are cooked completely

> Serve hot rava idli with chutney or sambar

Neymeen Fry / Seer Fish Fry / Queen Fish Fry


Today, we are going to prepare a mouthwatering fish fry.  You can use any big fish instead of Neymeen.  


Ingredients:


Neymeen / Seer Fish/
Queen Fish                                    - 1/2 kg

Red Chilly powder                        - 1 tsp

Garam masala powder                   - 1/2 tsp 

Cumin / Jeerakam                          - 1/2 tsp

Lemon juice                                   - 3/4 tsp

Curd                                               - 1 tsp (not so sour)

Green chilly                                  - 1 

Small onion / Shallots                  - 4

Ginger                                          - 1/4 inch piece

Garlic                                          - 3 cloves

Curry leaves                               - 1 sprig

Salt to taste

Oil for frying




Preparation:


> Wash fish thoroughly and keep it side  to remove the water content completely

> Make a paste of ginger, garlic, shallots, lemon juice, curd, green chilly, curry leaves, cumin, red chilly powder,  garam masala powder and salt without adding any water

> Marinate the fish with this paste and keep it aside for one hour

> After an hour, heat oil in a pan and fry the marinated fish well 

> Tasty fish fry is ready to serve 

You can serve this fish fry along with rice or chappathi as side dish, or can have along with onion salad as a snack / starter.
