VELLAYAPPAM / APPAM

Vellayappam’, is a traditional breakfast in Kerala, especially in Christian families… Earlier days it was known as ‘Kallappam’, because ‘kallu’ or ‘toddy,’ used as an important ingredient in preparation. But now-a-days because of unavailability of good toddy, everyone is using yeast instead of toddy…

 

Ingredients and preparation of batter:

1.     White Rice / Pachari/Pacharasi ---------------- 2 cups

2.     Coconut (grated) -------------------------------- 1 cup

3.     Yeast ---------------------------------------------- ½ teaspoon

4.     Garlic ---------------------------------------------- 4 numbers

5.     Shallots / small onion --------------------------- 5 numbers

6.     Cumin seeds / jeera ---------------------------- ½ teaspoon

7.     Sugar --------------------------------------------- 2 tablespoon

8.     Salt ----------------------------------------------- to taste

9.     Water -------------------------------------------- as needed

Wash and soak the white rice for 2 - 3 hours.  In a mixer grinder, grind the rice with water to cover till it become smooth paste.  Don’t pour too much of water, because the batter should be thick. Then grind grated coconut, yeast, garlic, shallots, cumin seeds, sugar and salt with a little water into a thick paste.  Don’t grind it finely, like aappam, or palappam batter.  Mix this with grinded rice well and keep it for fermentation. The time taken for fermentation process will be different according to the weather condition. Once the process of fermentation completed, check the salt and consistency, adjust the consistency and prepare vellayappam.

 

Preparation of Vellayappam:

1.     Heat the dosa thava/ pan

2.     Pour the batter and just press. Don’t do like dosa, because the vellayappam is not so thin and not so big

3.     Cook both the sides well (don’t burn)

4.     Now vellayappam is ready to serve
