Dal fry is one of the most popular dal recipe in India. It can be prepared either with toor dal (thuvaraparippu) or with splitted green gram. Here we are preparing the easiest and tastiest version of dal fry. In 20 to 25 minutes, we can prepare this dish. It can serve with rice, chappathi, roti, naan, parotta etc.. So, let's start?
Ingredients:
For pressure cooking the dal:
Toor dal / thuvaraparippu - 1/2 cup
Water - 1.5 cup for cooking the dal in pressure cooker
Other ingredients:
Onion - 1 medium sized (finely chopped)
Green chilly - 2 (slit or chopped)
Tomato - 1 medium sized (finely chopped)
Dried red chilly - 2 to 3 (cut into two or three pieces)
Curry leaves - 1 spig
Ginger garlic paste - 1.5 teaspoon
Cumin seeds - 1 teaspoon
Mustard - 1 teaspoon
Asafoetida powder - 1 or 2 pinch
Turmeric powder - 1/2 teaspoon
Red chilli powder - 1/2 teaspoon
Garam masala powder - 1/2 teaspoon
Kasuri methi - 1 teaspoon
Oil / unsalted butter / ghee - 2 to 3 tablespoon
Coriander leaves for seasoning
Water as required
Salt as required
Preaparation:
> Wash toor dal thoroughly and put in the pressure cooker and add 1.5 cup water and a pinch of turmeric powder and cook in high flame for 1 whistle and reduce the flame and cook for 3 to 4 whistles or until the dal is cooked
> Once the dal is cooked, mash the dal lightly with a wired whisk or with a spoon and keep it aside
> In a pan, pour oil / ghee / unsalted butter and splutter mustard
> Then add cumin seeds and fry them
> Add onion and fry till they become transparent or light brown
> Add ginger garlic paste and fry for some seconds till the raw aroma goes
> Add dried red chilly, green chilly, curry leaves and stir
> Add the powders ( turmeric, red chilly, garam masala, asafoetida) and fry for a second
> Add tomatoes and stir well and allow it to cook till the tomatoes become soft and mash it well
> Add mashed dal into it and stir well, add water if required, add salt and stir well and cook for 4 to 5 minutes
> Dal fry should be in thick or medium consistency, so do not add too much water and spoil the taste
> Add kasuri methi and stir well and switch off the flame
> Add chopped coriander leaves and serve hot (add some ghee or butter if required)
