Madakku Dosa

‘Madakku Dosa’ is a very yummy evening snack for children…. I remember my school days… my mother prepared madakku dosa, as evening snack for us…. She served hot dosa with love… I really miss those golden days in my life….

I am sure that, this will be a great idea for those mothers, who are thinking to give something different to eat for their children in the evening, especially children return home after school hours…

This recipe is very easy to prepare… So let’s try this out…

 

Ingredients:

1.      Maida / All-purpose flour ----------------- 1 cup

2.      Grated coconut ------------------------------1/2  to  1 cup

3.      Salt ---------------------------------------------- to taste

4.      Sugar -------------------------------------------- 2 -4 tablespoon

5.      Water -------------------------------------------- as needed

 

Preparation:

1.      Take the maida or all-purpose flour in a vessel and add salt and mix and then add water and make a batter in the consistency of dosa batter

2.      Adjust the salt according to your taste

3.      For filling, in another vessel, add grated coconut and sugar and mix well and keep it aside

4.      Heat the thava and pour one ladle (spoon) of dough and spread like dosa (thin)

5.      Allow it to cook one side well, and if you wish to turn it and cook the other side, you can.. otherwise put 2 tablespoon of filling inside the spread and fold

6.      Take the madakku dosa from the thava and have it hot

 

You can use wheat powder instead of maida and prepare the same.  Here, I  did the original madakku dosa …

Soya Chunks Roast

Soya chunks are also known as vegetarian meat.  This is because of its protein content. Soya chunks are made from defatted soy flour, a by-product of extracting soybean oil. This is easily available and easy to cook food item.  We can prepare many dishes using soy chunks like soy chunks curry, roast etc., and also can be used in pulao or biriyani. Today, as these are the days of lent, I prepared a soy chunk roast and wish to share the recipe with you…. J you can also try this out and tell me the feedback…
Ingredients:
Soya chunks --------------------------------- 100 grams
Big Onion ------------------------------------ ½ to 2 (lengthwise chopped)
Small onion --------------------------------- 5 – 10 (finely chopped)
Green chilli ---------------------------------2 - 3 (splitted lengthwise)
Ginger garlic paste ---------------------- 1 teaspoon
Oil ----------------------------------------- 2 -3 tablespoon (preferably olive oil or sunflower oil)
Curry leaves ------------------------------- 2 or 3 springs
Kashmiri chilli powder ----------------- 2 ½ teaspoon
Coriander powder ----------------------- 2 ½ teaspoon
Turmeric powder ------------------------ ½ teaspoon
Garam masala powder ----------------- ½ to 1 teaspoon
Coconut pieces --------------------------- 2 tablespoon (optional)
Coriander leaves ------------------------ 2 teaspoon (chopped) (optional)
Salt ----------------------------------------- to taste
Water ------------------------------------- as needed
Preparation:
1.     Wash and soak the soya chunks in water for one to two hours, then squeeze each soya chunks well and wash again
2.     Cut the washed soya chunks in to three or four (as per the size of pieces required in the curry) pieces and keep it aside
3.     Heat the pan and pour oil, and add one spring curry leaves and stir
4.     Add big onion, small onions and green chilli and sauté till it become soft
5.     Add a little salt and ginger  garlic paste and stir till the green smell goes
6.     Add all the powders (Kashmiri chilli powder, coriander powder, turmeric powder, and garam masala and stir for one minute
7.     Add soya chunk pieces and stir for one minute
8.     Add water to cover the ingredients and adjust the salt according to your taste and allow the water to boil
9.     Add one spring of curry leaves
10.     Turn the flame into low, and close the lid and allow it to cook well and the water become thick (stir occasionally) like a roast (not dried roast)
11.     The soya chunks roast is ready to serve, garnish with coriander leaves and serve hot as side dish for rice, chappathi, pulao etc
Notes:
Ø If you love the taste of tomato, you can add tomato too after the onion turns soft
Ø If you can adjust the spiciness according to your taste
Ø If you need gravy, switch off the furnace when the curry reaches the consistency of gravy
Ø If you wish to do it as a dried roast, spent some more time to become dried roast
I am sure that you will love the taste of soya chunks roast.  It will look exactly like the beef roast… so enjoy eating…

Paneer Gravy

This is my first paneer recipe in my blog… I am sure that, you will love the taste of this side dish…. Usually, I prepare these types of vegetarian dishes at the time of lent.... Let’s start preparation …J
Ingredients:

<![if !supportLists]>4.     <![endif]>Tomato ----------------------------------- 2 medium sized (chopped)
<![if !supportLists]>5.     <![endif]>Ginger ----------------------------------- 1 teaspoon (chopped)
<![if !supportLists]>6.     <![endif]>Garlic ------------------------------------ 1 teaspoon (chopped)
<![if !supportLists]>7.     <![endif]>Cashew nut ----------------------------- 8 - 10 numbers
<![if !supportLists]>8.     <![endif]>Turmeric powder --------------------- ¼ teaspoon
<![if !supportLists]>9.     <![endif]>Kashmiri chilli powder-------------- ¾ to 1 teaspoon
<![if !supportLists]>10.    <![endif]>Coriander powder ------------------- ½ to ¾ teaspoon
<![if !supportLists]>11.    <![endif]>Black pepper powder--------------- ½ teaspoon
<![if !supportLists]>12.    <![endif]>Chilli powder ------------------------- ½ teaspoon (if you need more spiciness, add 1 teaspoon)

<![if !supportLists]>14.    <![endif]>Water ----------------------------------- as needed
<![if !supportLists]>15.    <![endif]>Oil ---------------------------------------- 2-3 tablespoon

Preparation:
<![if !supportLists]>1.     <![endif]>Cut the paneer into small square shape and keep it aside
<![if !supportLists]>2.     <![endif]>Heat the pan, and add oil
<![if !supportLists]>3.     <![endif]>Heat the oil and add ginger and garlic and stir for one minute
<![if !supportLists]>4.     <![endif]>Add cashew nut, chopped small and big onions and add a little salt and allow it to cook till it become translucent or soft
<![if !supportLists]>5.     <![endif]>Add tomato and stir well and allow it to cook well
<![if !supportLists]>6.     <![endif]>Switch off the furnace and keep the cooked ingredients to cool down
<![if !supportLists]>7.     <![endif]>Grind the ingredients in a mixer grinder and make a thick paste
<![if !supportLists]>8.     <![endif]>Heat the pan and add a little oil and put the paneer, which we already sliced and stir for 2 to 3 minutes
<![if !supportLists]>9.     <![endif]>Add the paste which we already prepared to the pan and stir well
<![if !supportLists]>10.    <![endif]>Add turmeric powder, chilli powder, Kashmiri chilli powder, pepper powder, and coriander powder and stir well
<![if !supportLists]>11.    <![endif]>Add a little water and allow it to start boiling in a high flame and then reduce the flame to low and adjust the salt according to your taste
<![if !supportLists]>12.    <![endif]>Cook till the oil separated (stir occasionally)
<![if !supportLists]>13.    <![endif]>Garnish with chopped coriander leaves
<![if !supportLists]>14.    <![endif]>Tasty paneer gravy is ready to serve …

Notes:
<![if !supportLists]>Ø <![endif]>You can add 1 tablespoon sunflower oil and 1 tablespoon butter or ghee, if you wish so
<![if !supportLists]>Ø <![endif]>Taste will be good to cook in sunflower oil or ghee or butter, instead of coconut oil
<![if !supportLists]>Ø <![endif]>If you are using salted paneer, check the salt requirement and adjust accordingly
