VEGETABLE PULAV / VEGETABLE PULAO



Ingredients:
1.     Basmati rice -------------------------- 1 ½ cups
2.     Big onion ----------------------------- 1 (finely chopped)
3.     Green chilli --------------------------- 1 number (lengthwise split into halves)
4.     Ginger garlic paste ----------------- 1 teaspoon
5.     Carrot --------------------------------- 1 medium size (Chopped finely in lengthwise)
6.     Beans --------------------------------- 8 numbers (chopped sidewise)
7.     Capsicum ---------------------------- 1 medium sized (finely chopped)
8.     Cabbage ----------------------------- ½ cup (chopped lengthwise)
9.     Black Pepper powder -------------- 2 teaspoon
10.Oil /Ghee ---------------------------- 2 tablespoon
11.Water -------------------------------- 3 ½ cups

Preparation:
1.     Wash and soak basmati rice for half an hour and drain the water and keep it aside
2.     Cut all the vegetables (ingredients from 3 to 6),excluding onion and add a little salt and pepper powder to it and mix well and keep it aside
3.     Heat the pan and pour ghee or oil and add chopped onion and green chilli and stir well till it become light golden colour
4.     Add ginger garlic paste and stir for 2 minutes
5.     Add vegetables and mix well and close the lid of the pan and allow it to cook for 4- 5 minutes in medium flame
6.     Add basmati rice and mix well and stir for 2-3 minutes
7.     Add water and check the salt, when it boil, and adjust the salt according to the taste
8.     Close the lid of the pan and allow it to cook in low flame for 10- 15 minutes (or until the rice cook well, because the time for cooking will vary according to the quality of rice)
9.     The vegetable pulav is ready to serve

Notes:
Ø You can add vegetables according to your taste and availability like broccoli etc..
Ø Don’t burn the onion or make into dark golden colour
Ø If you wish to add cashew nut and raisins,  you can…

This can be served with side dishes like paneer butter masala, chicken curry, gobi Manchurian, mutton curry,tomato sauce etc…
