Red Beans or Vanpayar (Malayalam), is also known
as ‘azuki beans’ are a good source of minerals.
I am introducing a kerala style red beans poriyal or mezhukkupuratti
with red beans. This is somewhat same as
Tamilian’s sundal. This recipe is very easy to prepare and everyone love the
taste….
Ingredients:
1. Red beans (Vanpayar)
------------------------- 1 cup
2. Small onion
/shallots--------------------------- 20 numbers
3. Garlic cloves
------------------------------------- 8 numbers
4. Dried red chilli ----------------------------------
3 to 5 (according to the spiciness required)
5. Curry leaves
------------------------------------- 2 springs
6. Mustard
------------------------------------------- 1 teaspoon
7. Oil
-------------------------------------------------- 2 tablespoon
8. Water
--------------------------------------------- as needed
9. Salt
------------------------------------------------- to taste
Preparation:
1. Wash and soak the red beans or vanpayar
overnight (or soak for 3- 6 hours)
2. Chop small onions into small pieces,
flake the garlic cloves and dried chilli and keep it aside
3. Drain the water and take the beans in
the morning
4. In a vessel, take the beans, one spring
curry leaves, a little salt and add
water to cover the ingredients completely and cook it
5. Cook till the beans become soft (don’t
overcook)
6. Heat a pan and add oil and splutter
mustard
7. Add curry leaves, chopped shallots or
small onion and a pinch of salt and stir well for 2-3 minutes
8. Add crushed garlic and stir well for 2-3
minutes
9. Add flaked dried red chilli and stir for
1 minute

Add the cooked red bean into it and stir well
and allow it to cook another 5 minutes in low flame, stir occasionally

Check the salt and adjust accordingly

Vanpayar mezhukkupuratti is ready to serve
Notes:
Ø Instead of dried chilli, you can even
use red chilli powder
Ø In this recipe, I used 3 red chillies,
if you need more spiciness, you can add more red chillies
This is really easy to prepare and
healthy too… Even you can serve the same as evening snack for your children…
