Pesaha appam /
indri appam / inri appam, is Passover bread prepared in Kerala Christian’s
family on Maundy Thursday. The tradition
of making this is more common in almost all the Christian families. This bread is served with pesaha
milk / pesaha paal
Ingredients:
Rice ---------------------------- 1 cup
Urad dal ---------------------- ½ cup
Water ------------------------- as needed
Coconut ---------------------- 1 cup (grated)
Cumin seeds ---------------- 1/2 teaspoon
Garlic ------------------------- 4-6 numbers
Salt ---------------------------- to taste
Preparation:
1.
Rice and Urad
dal wash and soak for 3 hours

Grind rice and urad
dal, as thick as idli batter and keep outside for 1 ½
hours
3.
Grind coconut, cumin seeds, and
garlic together and add to the batter and stir well
4.
And keep for half an hour
5.
Heat the steamer with water
6.
In
the mould, which we use for making pesaha appam, grease with oil and pour the batter
7.
Add a cross using the palm leaf,
which we get from church on palm Sunday and steam it
8.
Check the appam,
whether its cooked or not, a toothpick
insert in the centre of the appam will come out clean
Then
serve the pesaha appam with
pesaha milk or pesaha paal
