Paneer / cottage cheese Cutlet


Paneer / Cottage cheese cutlet is a mouthwatering snack.  This is very easy to prepare and everyone loves to eat because of its taste.  Let's prepare yummy paneer cutlet in our kitchen today !!!


Ingredients:


Paneer / Cottage cheese        - 2 cups (crumbled)

Potato                                   - 1 cup (boiled and mashed)

Onion                                   - 2 tablespoon (finely chopped)

Carrot                                  - 1/2 (grated)

Green chilly                        - 1 (finely chopped)

Ginger paste                       - 1/2 teaspoon

Kashmiri red chilly powder - 1/2 teaspoon

Coriander leaves                  -  2 tablespoon (finley chopped)

Dry mango powder/
Aamchur                              - 1/2 teaspoon

Garam masala                      - 1/2 teaspoon

Corn flour                             -  2 tablespoon

salt as required

Bread crumbs                         - 1 cup

oil for shallow frying


For maida paste:

corn flour           - 1/4 cup

pepper               -  1/4 teaspoon (crushed)

maida                - 2 tablespoon

water                - 1/2 cup

salt                   - 1/2 teaspoon



Preparation:


> Prepare maida paste using all the ingredients and keep it aside.

> In a large mixing bowl, take all the ingredients (other than bread crumbs and oil) and mix well and keep it aside.

> Grease the hand with oil and prepare small ball sized patties. 

> Then dip the patties in maida paste well and coat with bread crumbs

> Heat the oil in a pan, and shallow fry the patties on medium flame, till it turns golden brown

> Yummy paneer cutlet is ready to serve with tomato sauce or salads.

Beef Cutlet / Meat Cutlet


Beef cutlet / meat cutlet is a crunchy snack or finger food.  I am introducing Kerala style beef / meat cutlet recipe, which is very easy to prepare and tasty too. I am sure kids love to eat this crunchy cutlet as evening snacks.. 


Ingredients:


Beef                                         - 1/2 kg

Ginger garlic paste                  - 1 tsp

Potato (medium sized)            - 2 - 3 numbers

Green chillies                          - 2-3 (or according to the spice requirement adjust the number) finely                                                       chopped

Curry leaves                            - 1 sprig (finely chopped)

Onion (medium sized)            - 1 1/2 numbers (finely chopped)

Ginger                                     - 1 inch piece (finely chopped)

Garam masala powder            - 1 tbsp

Pepper powder                        - 1 tsp

Salt to taste

Oil to fry

Egg                                        - 1 beaten

Bread crumbs  as needed

Water as required 



Preparation:


> Cook the cleansed beef with ginger garlic paste, 1/2 tbsp garam masala, 1/2 tsp pepper powder, salt  and water in a pressure cooker.

> Once it is cooled, mince the meat using a food processor / mixer grinder

> Cook the potatoes in a pressure cooker and peel the skin, once its cooled down 

> Mash the cooled potatoes and keep it aside

> In a pan, heat the oil and saute onion till it becomes soft.

> Add chopped ginger, chopped curry leaves, and chopped green chillies and saute well

> Add minced meat and mashed potatoes and mix well

> Add 1/2 tsp garam masala and 1/2 tsp pepper and mix well

> Allow the mixture to cool down

> Once it is cooled, make small balls and make a desired shape

> Dip each cutlet in the beaten egg and roll with bread crumbs.

> Deep fry in oil.  Cutlet is ready to serve.

> Serve it hot with tomato sauce and salad

Vazhakkoombu (Banana Flower) Cutlet


This recipe is very easy to prepare and highly nutritious too. My kids love to eat this cutlet.  I am sure that you will also love to eat. Let’s start the preparation of yummy vazhachundu cutlet (vazhakoombu / banana flower cutlet) !!!


Ingredients:


  • Vazhakoombu (banana flower) - 1 no
  • Oil                                            - 2 tbsp
  • Onion (medium)                        - 2 nos (finely chopped)
  • Ginger-garlic                             - 2 tbsp (finely chopped)
  • Greenchilly                                - 3 nos or as per spice required (finely chopped)
  • Curry leaves                              - 2 tbsp (chopped)
  • Turmeric Powder                       - 1/4 tsp
  • Chilli powder                             - 1/2tsp
  • Potato (medium)                        -2 no(boiled and mashed)
  • Salt                                           - As required
  • Garam masala                            - 1/2 tsp
  • Coriander leaves                         - 1/4 cup (chopped) , optional
  • Maida (for vegetarians)               - 2 tbsp  
                    OR, Egg (for non-vegetarians)     - 2 nos (beaten)

              ·         Bread crumbs                             - 2 cups
              ·         Oil (for frying)

Preparation:


& Remove some of the outer hard purple petals of banana flower till you see the soft petals and flowers. Then finely chop it and rub it with hand by adding little oil (1 or 2 teaspoon) to remove the stain threads in it. 

& Heat little oil in a pan and cook chopped banana flower for 5 minutes by adding little salt, turmeric powder and pepper powder. Remove from fire and keep aside.


& Heat 2 tbsp oil in a pan. Saute chopped ginger-garlic till it becomes soft. Now add chopped onion, green chillies and curry leaves and saute well by adding salt. When it becomes soft, add chilli powder and mix well.
 


& Now add cooked vazhakkoombu and mix well.

& Add garam masala, chopped coriander leaves and remove from fire and allow it to cool.

& Cook the potato, peel the skin and mash it.

 & Add the mashed potato to the vazhakkoombu mixture and mix it well.

& Mix maida with little salt and add water to make a thin batter. (for vegetarians). Non vegetarians can add little salt with beaten eggs


& Make balls out of the cutlet mix and shape it into oval shaped cutlets.


& Dip the cutlets in maida batter (make sure that the batter is so thin) or beaten egg, coat it with bread crumbs and fry it in oil.

& Serve hot with tomato sauce

CHICKEN CUTLET

Chicken cutlet is one of the bests snacks for kiddos… Everyone will like the taste…. Chicken cutlet is prepared from boneless chicken… Here, i am going to introduce the Kerala style chicken cutlet. We can serve the chicken cutlet with tomato sauce/ tomato ketchup or sliced big onion…

 

Ingredients:

1.     Boneless chicken ----------------------------- ½ Kilogram

2.     Potato ------------------------------------------- 2 numbers

3.     Small Onion ------------------------------------ 10 -15 numbers (finely chopped)

4.     Ginger ------------------------------------------- 1 teaspoon (finely chopped)

5.     Green chilli ------------------------------------ 4-5 numbers (finely chopped)

6.     Curry leaves ----------------------------------  1 spring (finely chopped)

7.     Pepper powder ------------------------------ 1 teaspoon

8.     Garam masala --------------------------------- ½ teaspoon

9.     Bread crumbs --------------------------------- 1 cup

10.     Egg white --------------------------------------- 1 – 2

11.     Salt ----------------------------------------------- to taste

12.     Oil ------------------------------------------------as needed (both  for deep fry and cook the ingredients)

 

 

Preparation:

1.     Boil the potatoes in water and keep it to cool, after it become cool remove the skin and mash it well and keep it aside

2.     Cut the boneless chicken into small pieces and keep it aside

3.     In a pan, heat two tablespoon oil and add ingredients from 3 to 6 (ie., small onion, ginger, green chilli, curry leaves) and stir well till it become soft

4.     Add chicken pieces and a little salt, into it and mix well and close the lid and allow it to cook well in low flame

5.     Add pepper powder and garam masala, when the water from chicken start to come out

6.     Cook until the water content completely dry and switch off the flame and allow it to cool

7.     Once it become cool, in a mixer grinder mince the mixture

8.     Add potato to the minced chicken and mix well

9.     Check the salt, and add if needed

10.      Prepare small balls from the mixture and shape it

11.     Beat the egg white. Dip the shaped cutlet into the egg white and roll the same in bread crumbs

12.      In another pan, heat oil to deep fry

13.     Put the cutlet into the oil and deep fry in medium flame

14.     Chicken cutlet is ready to serve

Serve the chicken cutlet with tomato sauce / ketchup or even with sliced big onion (dipped in salt and white vinegar mixture. You can see the recipe to prepare tomato sauce / ketchup in your kitchen, here J

 

Notes:

Ø You can use one big sized finely chopped big onion, instead of small onions

Ø Before making balls, make sure that there is no water content in the mixture.  If any water content you find, add some breadcrumbs and make it into dried mixture… otherwise, when it fry the shape will go and oil will go inside
