Vazhakkoombu (Banana Flower) Cutlet


This recipe is very easy to prepare and highly nutritious too. My kids love to eat this cutlet.  I am sure that you will also love to eat. Let’s start the preparation of yummy vazhachundu cutlet (vazhakoombu / banana flower cutlet) !!!


Ingredients:


  • Vazhakoombu (banana flower) - 1 no
  • Oil                                            - 2 tbsp
  • Onion (medium)                        - 2 nos (finely chopped)
  • Ginger-garlic                             - 2 tbsp (finely chopped)
  • Greenchilly                                - 3 nos or as per spice required (finely chopped)
  • Curry leaves                              - 2 tbsp (chopped)
  • Turmeric Powder                       - 1/4 tsp
  • Chilli powder                             - 1/2tsp
  • Potato (medium)                        -2 no(boiled and mashed)
  • Salt                                           - As required
  • Garam masala                            - 1/2 tsp
  • Coriander leaves                         - 1/4 cup (chopped) , optional
  • Maida (for vegetarians)               - 2 tbsp  
                    OR, Egg (for non-vegetarians)     - 2 nos (beaten)

              ·         Bread crumbs                             - 2 cups
              ·         Oil (for frying)

Preparation:


& Remove some of the outer hard purple petals of banana flower till you see the soft petals and flowers. Then finely chop it and rub it with hand by adding little oil (1 or 2 teaspoon) to remove the stain threads in it. 

& Heat little oil in a pan and cook chopped banana flower for 5 minutes by adding little salt, turmeric powder and pepper powder. Remove from fire and keep aside.


& Heat 2 tbsp oil in a pan. Saute chopped ginger-garlic till it becomes soft. Now add chopped onion, green chillies and curry leaves and saute well by adding salt. When it becomes soft, add chilli powder and mix well.
 


& Now add cooked vazhakkoombu and mix well.

& Add garam masala, chopped coriander leaves and remove from fire and allow it to cool.

& Cook the potato, peel the skin and mash it.

 & Add the mashed potato to the vazhakkoombu mixture and mix it well.

& Mix maida with little salt and add water to make a thin batter. (for vegetarians). Non vegetarians can add little salt with beaten eggs


& Make balls out of the cutlet mix and shape it into oval shaped cutlets.


& Dip the cutlets in maida batter (make sure that the batter is so thin) or beaten egg, coat it with bread crumbs and fry it in oil.

& Serve hot with tomato sauce
