Whole wheat bread recipe (with oven)


Whole wheat bread is a main item in the menu now a days, for breakfast or for evening snack or even for dinner in every busy house, right? But do you think what we are buying from shops are worth to eat?  I had listened to many news and reports saying the bread we bought from shops are including many ingredients which are harmful to our lives. So all types of bread items stepped away from my home.  Then i thought to prepare bread at home and searched and tried many recipes. Thus i got a perfect whole wheat bread recipe, which is easy to prepare and tasty too. Today, we are going to prepare the same whole wheat bread in our kitchen.  Let's start?





Ingredients:


Whole wheat flour / Atta - 3 cups

Instant yeast                     - 1 teaspoon (if you have dry active yeast, use 1/2 teaspoon)

Salt                                   - 1 teaspoon

Sugar                                - 1 to 2 tablespoon 

Ghee/ oil / Butter             - 2 tablespoon

Curd / Dahi / Yogurt       - 2 tablespoon ( you can replace this with vinegar 1.5 tablespoon)

Warm water                     - 1 to 1 1/2 cup

Milk                                - for brushing the top of the bread



Preparation:




If you are using instant yeast, you can follow the following steps of preparation.

> In a big mixing bowl, take flour, instant yeast, salt, sugar, butter/oil/ghee, curd and mix well with hand

> Then add warm water into it and mix well and knead to a soft dough ( the dough should be slightly sticky)

> Brush some water all over the dough in the bowl and cover the bowl with a lid or with a kitchen towel for 35 minutes

> After that, remove the dough and lightly punch and knead the dough again

> Make a log of the dough and place it in a greased loaf pan for 45 minutes. Cover the loaf pan and let it rise

> Preheat oven to 150 degree C for 5 minutes

> Keep the loaf pan in the oven and bake for 20-25 minutes or until the bread sounds hollow when tapped

> When whole wheat bread is still lightly hot, remove from the loaf pan and keep it on a wired tray to cool.

> Fresh whole wheat bread is ready without any added preservatives or unwanted ingredients.


If you are using dry active yeast, you can follow the following steps:

> Take 1 to 1 1/2 cup warm water and add 1 tablespoon sugar and active dry yeast and mix well and keep this to activate (around 10-15 minutes)

> In a bowl, add wheat flour and salt and mix well and add 1 cup the yeast mixture and mix well

> Then add ghee/ butter/ oil, curd, 1 tablespoon sugar and knead well to make a sticky soft dough

> Then apply water all over the dough and cover the bowl and keep for 2 hours

> After 2 hours, take the dough out and knead again

> Make a log of dough and place it in a greased bread loaf pan

> Then cover the loaf pan and keep for another 45 minutes 

> Preheat the oven to 150 degree C for 5 minutes

> Place the loaf pan and bake for 20 to 25 minutes or until the bread sounds hollow when tapped

> Don't overcook, texture will go

> Whole wheat bread is ready, then remove it into a wired tray to cool down

Garlic chicken recipe


Ingredients:


Chicken                           - 1/2 kg

Curd / yogurt                  - 1 cup

Green chillies                 - 4 numbers

Onion                             - 1 Medium sized (finely chopped)

Ginger                            - 1 inch piece

Garlic                             - 3 cloves

Salt to taste

Black pepper to taste

Oil                                - 4 tbsp

Coriander leaves for garnishing


Preparation:


> Blend green chillies, ginger, garlic and black pepper to a fine paste

> Add yogurt or curd to this mix and add salt to taste

>  Clean and wash chicken pieces and marinate the same with the paste and leave it for an hour

> In a non-stick pan, heat enough oil and let onions fry until brown. 

> Add chicken to the onions and fry them until done. 

> Add some salt to taste and garnish with coriander leaves

> Tasty garlic chicken is ready to serve

Yummy Chicken 65 recipe


Here is the chicken 65 recipe. This is very easy to prepare and very tasty also. Let's start preparation?

Ingredients:


Chicken                              - 1/2 kg (cut into pieces)

Egg                                    - 3 numbers

Turmeric powder              - 1/2 teaspoon

Red chilli powder            - 2 teaspoon

Coriander powder           - 2 teaspoon

Garam masala powder    - 1 teaspoon

Curd                                - 1/2 cup

Ginger garlic paste         - 2 teaspoon

Salt to taste

Oil for frying


Preparation:


> In a mixing bowl, take egg white and egg yolk together along with other ingredients (turmeric powder, red chilli powder, coriander powder, garam masala powder, curd, ginger garlic paste) and add salt to taste and mix well.

> Clean and wash chicken pieces to marinate 

> Then mix cleaned chicken pieces in the mix which we already prepared. (Mix thoroughly with your hand) . Then allow it to marinate for one hour.

> In a kadai / frying pan, pour oil and make it hot and put the chicken pieces and fry till it become crispy. 

> Serve hot as a starter, or along with rice or chappathi

> Chicken 65 is ready...

Chickpeas soya chunks curry (yummy side dish for appam/ idiyappam / chappathi / roti etc)


This dish is actually a twist to a normal chickpeas curry.  This recipe is an experiment done by me, when very less amount of soya chunks was available at home.  This experiment became a great success when everyone love the taste. Even kids love this curry along with appam or chappathi, or roti, or even with puttu, nool puttu etc..

Let's start preparation of the yummy side dish?





Ingredients:


Chickpeas / white kadala           - 1 cup

Soya chunks                              - 10 numbers

Big onion                                  - 1/2 of a medium sized (finely chopped)

Small onion                              - 6 (finely chopped)

Green chilli                               - 1 (slit lengthwise)

Tomato                                       - 1 medium sized (finely chopped)

Dried red chilli                          - 2 numbers ( cut into two pieces)

Curry leaves                              - 2 spigs

Chicken masala                         - 1.5 to 2 tablespoon

Coriander powder                     - 1 teaspoon

Garam masala                           - 1/2 teaspoon

Mustard seeds                           - 1 teaspoon

Oil                                              - 2 tablespoon

Salt to taste

Water as required

Coconut milk                            - 3/4 cup (thick)




Preparation:



> Wash and soak chickpeas overnight (or minimum 5 hours)

> In a bowl, take boiled water and soak soya chunks for 15 minutes and then squeeze and wash

> Again put the same soya chunks in hot water for 10 more minutes and squeeze and cut into small pieces and keep it aside

> Take thick coconut milk and keep it aside

> In a pressure cooker, put soaked chickpeas, soya chunks pieces, chopped onions, half of chopped small onion,  green chilli, tomato, ginger garlic paste, chicken masala, one sprig curry leaves,  salt to taste and pour water just to cover the ingredients.

> Cook these mixture in high flame for one whistle and reduce the flame to low and cook for 4 to 5 whistles or until the chick peas and soya chunks cook well (not in mashy form). Allow this to release the pressure and check whether it is cooked well and keep it aside

> In a pan / kadai, heat oil and splutter mustard, add the remaining chopped small onion, dried red chilli, and curry leaves and stir well until the onion become soft

> Add coriander powder and garam masala powder and stir for a second and add the pressure cooked ingredients into it and stir well for few minutes and cover the lid and cook for 5 minutes

> Add coconut milk and adjust salt and consistency and stir well for 3 more minutes and switch off the flame.

> Yummy chickpeas soya chunks curry is ready to serve

Chilli Chicken Recipe


One of the favorite side dishes of my kiddo is chilli chicken along with Kerala Parotta.  Here i am going to introduce the easiest and tastiest version of chilli chiken recipe. Let's start?




Ingredients:


Chicken                          - 1/2 kilogram (with or without bones, cut into small pieces)


For marination:

Egg white                     - 1 (of one egg)

Corn flour                    - 2 tablespoon

Soya sauce                  - 1.5 tablespoon

Ginger and garlic        - 1.5 tablespoon(chopped)

Green chilli                - 2 -3 ( chopped)

Kashmiri chilli powder - 1/2 teaspoon

Pepper powder              - 1/2 teaspoon

Salt to taste


For preparing sauce:

Big onion                         - 2 medium sized (cut into square pieces)

Capsicum                        - 1 big sized (cut into square pieces)

Ginger                             - 1 teaspoon (finely chopped)

Garlic                             - 1 teaspoon (finely chopped)

Kashmiri chilli powder  - 1 teaspoon

Spring onion                   - 2 teaspoon (for garnishing ) finely chopped

Soya sauce                     - 1 tablespoon

Tomato sauce                 - 1 tablespoon

Salt to taste

Oil as needed




Preparation:



Marinating:

> Make a paste of ginger, garlic and green chilli and add egg white, soya sauce, cornflour, kashmiri chilli powder , pepper powder, salt to taste and make a mixture. Then add washed and cleaned chicken into this mixture and mix well with your hand and keep it in the fridge for one to two hours.

Chilli chicken:

> In a pan, heat oil and fry the marinated chicken until it become golden colour

> Use the same pan and in to the hot oil add big onion, and capsicum and stir well till the onion become soft and add chopped ginger and garlic and stir well for 3 to 4 minutes

> In a cup of water, add kashmiri chilli powder and mix well and add this water into the pan and cook till the water starts boiling.  Then add soya sauce and tomato sauce and mix well

> Then add fried chicken pieces and stir well and keep the lid and cook in a medium flame till it become chilli chicken consistency (thick consistency)

> Add chopped spring onion and serve hot with chappathi, biriyani, parotta, naan, roti etc.,

Banana smoothie Recipe


In summer days, we all feel like having some juice. If it is something new, it will be great, right?  So here is one of the easiest and tasty juice recipe.  Now we are going to prepare a smoothie with banana. Let's start?

Ingredients:


Banana                              - 2 numbers (long)

Milk                                  - 2 cups (boiled and chilled)

Honey or sugar                 - 2 to 3 tablespoon

Cinnamon powder           - 2 pinch

Vanilla essence                - few drops



Preparation:


> Peel the banana and cut into thin round slices and spread in a plate and freeze it for 2 to 3 hours.  

> Boil the milk and make it cool down and freeze that also for 2 to 3 hours along with  banana

> In a mixer jar, take the frozen banana slices and make a smooth paste

> Crush the frozen milk and add this to the jar and blend along with banana paste

> Add cinnamon powder, honey or sugar and vanilla essence and blend

> This will be a thick consistency, if it is too thick add some more chilled water or milk and adjust the consistency

> Banana smoothie is ready to serve in a glass

Easy dal fry recipe


Dal fry is one of the most popular dal recipe in India. It can  be prepared either with toor dal (thuvaraparippu) or with splitted green gram.  Here we are preparing the easiest and tastiest version of dal fry.  In 20 to 25 minutes, we can prepare this dish. It can serve with rice, chappathi, roti, naan, parotta etc.. So, let's start?




Ingredients:


For pressure cooking the dal:

Toor dal / thuvaraparippu         - 1/2 cup

Water                                        - 1.5 cup for cooking the dal in pressure cooker


Other ingredients:

Onion                     - 1 medium sized (finely chopped)

Green chilly           - 2 (slit or chopped)

Tomato                  - 1 medium sized (finely chopped)

Dried red chilly    - 2 to 3 (cut into two or three pieces)

Curry leaves         - 1 spig

Ginger garlic paste - 1.5 teaspoon

Cumin seeds            - 1 teaspoon

Mustard                   - 1 teaspoon

Asafoetida powder - 1 or 2 pinch

Turmeric powder   - 1/2 teaspoon

Red chilli powder - 1/2 teaspoon

Garam masala powder - 1/2 teaspoon

Kasuri methi               - 1 teaspoon

Oil / unsalted butter / ghee - 2 to 3 tablespoon

Coriander leaves for seasoning

Water as required

Salt as required




Preaparation:



> Wash toor dal thoroughly and put in the pressure cooker and add 1.5 cup water and a pinch of turmeric powder and cook in high flame for 1 whistle and reduce the flame and cook for 3 to 4 whistles or until the dal is cooked

> Once the dal is cooked, mash the dal lightly with a wired whisk or with a spoon and keep it aside

> In a pan, pour oil / ghee / unsalted butter and splutter mustard

> Then add cumin seeds and fry them

> Add onion and fry till they become transparent or light brown

> Add ginger garlic paste and fry for some seconds till the raw aroma goes

> Add dried red chilly, green chilly, curry leaves and stir

> Add the powders ( turmeric, red chilly, garam masala, asafoetida) and fry for a second

> Add tomatoes and stir well and allow it to cook till the tomatoes become soft and mash it well 

> Add mashed dal into it and stir well, add water if required, add salt and stir well and cook for 4 to 5 minutes

> Dal fry should be in thick or medium consistency, so do not add too much water and spoil the taste

> Add kasuri methi and stir well and switch off the flame


> Add chopped coriander leaves and serve hot (add some ghee or butter if required)

Caramel Custard / Flan / Caramel pudding without oven recipe


Caramel custard is one of the favorite dessert items in our home.  My hubby and kids love to eat this dish every now and then.  My daughter is against egg (she won't eat in any form), so i am using caramel custard or cake dishes to make her eat egg (as a toddler, she doesn't know the content for now ) :-)

Here, i am introducing an easy to prepare version of caramel custard / Flan recipe.  This recipe is without using oven recipe. So everyone can try this recipe at home very easily. The taste will also be very yummy. Let's start?




Ingredients:


Milk                             - 1 packet or 500 ml

Sugar                           - 1/2 cup or less (as per sweet required)

Egg                             - 4 numbers

Corn flour                  - 1 tablespoon

Vanilla essence          - 1 teaspoon

Sugar for caramelizing - 3 tablespoon



Preparation:



> For making caramel, use the same pan for making pudding,  put 3 tablespoon sugar and place it on the stove

> Keep the flame to the lowest when it starts changing colour to brown.  When the melted sugar become dark brown color switch off the flame and swirl the pan with tongs and keep it aside

> Take 1/4 cup milk in a cup, and put cornflour onto it and mix well till it become watery without any lumps and keep it aside

> To make the custard, in a blender, take eggs, sugar and vanilla essence and blend for a minute


> Add the remaining milk and blend for one more minute and then add the cornflour milk into this and mix 

> Pour this into the prepared custard pan

> Boil water in a steamer, and place the custard pan in the steamer, close the lid. 

> Once steam comes, simmer for 10-12 minutes and switch off the flame and leave it for 5 more minutes.

> Open the lid and allow it to cool down to the room temperature

> Keep in fridge, preferably overnight

> Serve chilled

Ari murukku / Rice Chakli / Murukku / Kerala murukku recipe


Here is the recipe:

Ingredients:


Rice flour                           - 2 cups

Uzhunnu flour                   - 1 cup

Ghee                                  - 2 teaspoon

Salt as required

Boiled water  as required

Black sesame seeds         - 1 teaspoon

Cumin seeds                    - 1 teaspoon

Oil for frying


Preparation:


> Here we are using fried rice flour and fried uzhunnu (urad dal) flour for making murukku.

> You can prepare urad dal flour, by frying the urad dal in a pan and powder it using a mixer grinder

> Then in a mixing vessel, take rice flour, urad flour, ghee, salt, sesame seeds and cumin seeds, and mix well and make a dough (as idiyappam or nool appam consistency) using boiled water.

> Use a star mould in idiyappam maker, and put the dough into it

> In a bottom thick pan, pour oil for frying and when it become hot, press the idiyappam maker and each murukku into the oil and fry both the sides till it become golden brown colour

> Ari murukku is ready to serve

> After cooling down, keep it in a container for minimum one week

Easy Rava Dosa recipe


Rava dosa is a crispy dosa made with rava, rice flour etc., The main advantage of rava dosa is that no need to ferment the batter overnight. We can prepare this dosa instanly within 15 minutes of making batter. So let's start to prepare easy rava dosa today? Here, is the recipe:




Ingredients:


Rava / Sooji / Semolina           - 1/2 cup

Rice flour                                 - 1/2 cup

Maida / all purpose flour         - 1/4 cup

Cumin seeds                            - 1 teaspoon

Green chilly                            - 1 (finely chopped)

Carrot                                     - 2 tablespoon (grated / finey chopped)

Ginger                                     - 1/2 teaspoon (grated / finely chopped)

Curry leaves                           - 5 -6 (finely chopped)

Coriander leaves                    - 2 tablespoon (finely chopped)

Onion                                     - 1 (finely chopped)

Water                                     - 2 1/2 cup or more

Oil for roasting dosa

Salt to taste



Preparation:


> In a mixing bowl, take rava, rice flour, maida and add salt and water and mix well with a spoon or whisk with a wire until there are no lumps

> Add cumin, grated carrot, ginger, green chilly, curry leaves, coriander leaves, onion and mix well

> Add water until the batter consistency become buttermilk like consistency (not as normal dosa batter). Cover the bowl and keep it for 20 minutes. After 20 minutes again check the consistency and add more water if needed.




> Heat a non stick dosa tawa over medium flame. Ensure that tawa is hot, otherwise the batter will stick to the pan and dosa will not come out well.  Check the hot by sprinkling some water on it. If water drops evaporate immediately, tawa is ready to prepare dosa.

> Take a ladle / spoon full batter and pour from about 3-4 inch height on in a circular motion starting from edge to centre



> Pour the batter until it covers the centre. Maintain some holes here and ther. Those holes allows steam to escape and make dosa crispy.

> Sprinkle 1/2 teaspoon oil around edges of dosa. Cook until it turns light golden brown and crispy, for around 2 minutes.

> Turn and cook the other side too




> Crispy rava dosa is ready to serve along with chutney and sambar :-)
