Shahi Paneer

Paneer, also known as cottage cheese, is a dairy product which is made by curdling the milk with the help of lemon or vinegar and then drain the liquid.  Paneer is very delicious as well as healthy.  In our Indian cuisines, it plays a vital role because of its health benefits like a good source of calcium, protein, etc,.

So, today we are going to prepare a dish or side dish with Paneer. Shahi paneer is a thick and delicious recipe with paneer.  Its preparation is very easy.  Let's start our preparation:

Ingredients:

Paneer cubes                                         - 200 gm
Big onion (chopped)                            - 2 numbers
Tomato (Chopped)                              - 2 numbers
Ginger                                                    - 1 small piece
Garlic                                                     - 3 flakes
Green chilly                                          - 2 numbers
Pepper powder                                     - 1/2 tsp
Red chilly powder                               - 1 tsp
Turmeric powder                                - 3/4 tsp
Garam masala powder                      - 1 tsp
Fresh cream                                         - 5 tbsp
Dry fruits (cashew & raisins)           - 1/4 cup
Milk                                                       - 1/2 cup
Ghee                                                      - 8-10 tbsp
Salt to taste
Coriander leaves (optional) to garnish


Preparation: 

>  Grind tomatoes, onion, ginger, garlic and green chillies in a mixer and make a fine paste

>Heat ghee in a kadhai or pan

> Fry paneer cubes over medium flame until it turns light brown and keep it aside

> Saute the dry fruits in 1 tbsp of ghee and keep it aside

>  Pour some more ghee and fry the paste until it turns golden brown and ghee starts separating.

> Add salt, red chilli powder, pepper powder, turmeric powder, garam masala powder and saute for 1 to 2 minutes

> Add milk to the gravy and bring the gravy to boil

> Reduce flame and cook the contents until gravy becomes thick

> Add half of the dry fruits in gravy while it is being cooked

> Add paneer cubes and fresh cream in gravy

> Heat the contents for 5 minutes 

> Hot shahi paneer is ready to serve

> Transfer the shahi paneer into a serving dish and garnish with fresh cream, remaining dry fruits and coriander leaves. 

> Serve hot with paratha or nan or chappathi

Ingredients:

<![if !supportLists]>4.     <![endif]>Tomato ----------------------------------- 2 medium sized (chopped)
<![if !supportLists]>5.     <![endif]>Ginger ----------------------------------- 1 teaspoon (chopped)
<![if !supportLists]>6.     <![endif]>Garlic ------------------------------------ 1 teaspoon (chopped)
<![if !supportLists]>7.     <![endif]>Cashew nut ----------------------------- 8 - 10 numbers
<![if !supportLists]>8.     <![endif]>Turmeric powder --------------------- ¼ teaspoon
<![if !supportLists]>9.     <![endif]>Kashmiri chilli powder-------------- ¾ to 1 teaspoon
<![if !supportLists]>10.    <![endif]>Coriander powder ------------------- ½ to ¾ teaspoon
<![if !supportLists]>11.    <![endif]>Black pepper powder--------------- ½ teaspoon
<![if !supportLists]>12.    <![endif]>Chilli powder ------------------------- ½ teaspoon (if you need more spiciness, add 1 teaspoon)
<![if !supportLists]>13.    <![endif]>Salt -------------------------------------- to taste
<![if !supportLists]>14.    <![endif]>Water ----------------------------------- as needed
<![if !supportLists]>15.    <![endif]>Oil ---------------------------------------- 2-3 tablespoon
<![if !supportLists]>16.    <![endif]>Coriander leaves --------------------- to garnish

Preparation:
<![if !supportLists]>1.     <![endif]>Cut the paneer into small square shape and keep it aside
<![if !supportLists]>2.     <![endif]>Heat the pan, and add oil
<![if !supportLists]>3.     <![endif]>Heat the oil and add ginger and garlic and stir for one minute
<![if !supportLists]>4.     <![endif]>Add cashew nut, chopped small and big onions and add a little salt and allow it to cook till it become translucent or soft
<![if !supportLists]>5.     <![endif]>Add tomato and stir well and allow it to cook well
<![if !supportLists]>6.     <![endif]>Switch off the furnace and keep the cooked ingredients to cool down
<![if !supportLists]>7.     <![endif]>Grind the ingredients in a mixer grinder and make a thick paste
<![if !supportLists]>8.     <![endif]>Heat the pan and add a little oil and put the paneer, which we already sliced and stir for 2 to 3 minutes
<![if !supportLists]>9.     <![endif]>Add the paste which we already prepared to the pan and stir well
<![if !supportLists]>10.    <![endif]>Add turmeric powder, chilli powder, Kashmiri chilli powder, pepper powder, and coriander powder and stir well
<![if !supportLists]>11.    <![endif]>Add a little water and allow it to start boiling in a high flame and then reduce the flame to low and adjust the salt according to your taste
<![if !supportLists]>12.    <![endif]>Cook till the oil separated (stir occasionally)
<![if !supportLists]>13.    <![endif]>Garnish with chopped coriander leaves
<![if !supportLists]>14.    <![endif]>Tasty paneer gravy is ready to serve …

Notes:
<![if !supportLists]>Ø <![endif]>You can add 1 tablespoon sunflower oil and 1 tablespoon butter or ghee, if you wish so
<![if !supportLists]>Ø <![endif]>Taste will be good to cook in sunflower oil or ghee or butter, instead of coconut oil
<![if !supportLists]>Ø <![endif]>If you are using salted paneer, check the salt requirement and adjust accordingly
<![if !supportLists]>Ø <![endif]>If you don’t have cashew nut, use fresh cream
