Tasty Egg Curry

Egg curry is an unavoidable side dish in breakfast, right? Today i am introducing very simple and easy to prepare egg curry, which is very tasty too... Let's start!!

Ingredients:

Egg                                                 - 4 numbers

Big onion                                      - 1 (finely sliced)

Small onion                                  - 10 - 15 numbers (sliced)

Ginger garlic paste                      - 1 tsp

Curry leaves                                  - 1 spring (optional)

chicken masala                             - 1 1/2 tbsp

coconut milk                                 - 4 tbsp

water / second milk of coconut - for boiling as per requirement

salt to taste

Oil (preferably gingelly oil)        -  3 tbsp

Preparation:

> Hard boil the eggs and remove shells and keep it aside

> Take first and second milk (1/2 to 1 cup) from coconut and keep it aside

>  In a pressure cooker, add oil and heat 

> Add sliced big oinion and small onion and saute well for a minute

> Add salt and saute well

>Add ginger garlic paste and saute for one more minute

> Add curry leaves and saute

> Add chicken masala and saute

> Add the second coconut milk or water and saute and check the spice and salt, if its correct, close the lid of the pressure cooker and keep for one whistle in high flame and 2 whistles in low flame. 

> Switch off the flame and allow to pressure goes for 3-5 minutes

> open and check the consistency require for the egg curry, if the consistency is as per your requirement, switch on the flame for a minute and add the first milk and switch off the flame (don't allow it to boil after adding the first milk)

> then add the boiled eggs without shell and serve hot in a serving bowl

> Yummy egg curry is ready to eat


Note: You can use any oil, but I prefer to use gingelly (sesame oil), as i love the taste...
you can add coriander leaves for seasoning too, if you love the flavor.


Shahi Paneer

Paneer, also known as cottage cheese, is a dairy product which is made by curdling the milk with the help of lemon or vinegar and then drain the liquid.  Paneer is very delicious as well as healthy.  In our Indian cuisines, it plays a vital role because of its health benefits like a good source of calcium, protein, etc,.

So, today we are going to prepare a dish or side dish with Paneer. Shahi paneer is a thick and delicious recipe with paneer.  Its preparation is very easy.  Let's start our preparation:

Ingredients:

Paneer cubes                                         - 200 gm
Big onion (chopped)                            - 2 numbers
Tomato (Chopped)                              - 2 numbers
Ginger                                                    - 1 small piece
Garlic                                                     - 3 flakes
Green chilly                                          - 2 numbers
Pepper powder                                     - 1/2 tsp
Red chilly powder                               - 1 tsp
Turmeric powder                                - 3/4 tsp
Garam masala powder                      - 1 tsp
Fresh cream                                         - 5 tbsp
Dry fruits (cashew & raisins)           - 1/4 cup
Milk                                                       - 1/2 cup
Ghee                                                      - 8-10 tbsp
Salt to taste
Coriander leaves (optional) to garnish


Preparation: 

>  Grind tomatoes, onion, ginger, garlic and green chillies in a mixer and make a fine paste

>Heat ghee in a kadhai or pan

> Fry paneer cubes over medium flame until it turns light brown and keep it aside

> Saute the dry fruits in 1 tbsp of ghee and keep it aside

>  Pour some more ghee and fry the paste until it turns golden brown and ghee starts separating.

> Add salt, red chilli powder, pepper powder, turmeric powder, garam masala powder and saute for 1 to 2 minutes

> Add milk to the gravy and bring the gravy to boil

> Reduce flame and cook the contents until gravy becomes thick

> Add half of the dry fruits in gravy while it is being cooked

> Add paneer cubes and fresh cream in gravy

> Heat the contents for 5 minutes 

> Hot shahi paneer is ready to serve

> Transfer the shahi paneer into a serving dish and garnish with fresh cream, remaining dry fruits and coriander leaves. 

> Serve hot with paratha or nan or chappathi

Ragi Pakoda (Finger millet fritters)


Ragi or Finger millet is one of the most nutritious and healthy cereals.  Include ragi in our daily diet because of it's health benefits.  Mostly ragi introduce to everyone in the form of porridge from our childhood. It's health benefits are amazing.  So, today we are going to prepare an easy and healthy Indian snack with ragi or finger millet. Let's start to prepare tasty ragi pakoda in our home...


Ingredients:


Ragi flour                                            - 1 cup

Rice flour                                            - 2 tbsp

Big onion (Chopped)                          - 2 numbers

Ginger (Finely chopped)                    - 1 tsp

Curry leaves                                       - one sprig

Asafoetida                                          - 1/4 tsp

Salt to taste

Oil for deep frying

Water as needed

Coriander leaves (optional)



Preparation:


>  Take all the ingredients other than oil and water and mix it well in a bowl

> Add required amount of water to prepare a sticky dough

> Heat enough oil in a bowl for deep frying 

> Sprinkle raw ragi mixture in to the oil

> Deep fry till crisp and golden brown on medium hot oil

> Once its ready, remove from oil and drain on absorbent paper and serve hot


It will be perfect to have with some tomato ketchup and tea... :-)

Rava Uppuma

* Roasted rava                         - 1 cup

* Mustard                                 - 1 tsp

* Big Onion (Chopped)           - 1

* Bengal gram dhal                 - 1 tsp

* Black gram dhal                   - 1 tsp

* Ginger (Chopped)                - 1/4 tsp

* Green chilli (Chopped)        - 1/2 tsp

* Curry leaves                         - a few

* Carrot (finely chopped)       - 3 tbsp (as per requirement)

* Oil                                        - 2 tbsp

*Ghee                                     - 1 tsp

* salt                                       - as per requirement

* water                                   - 2 cups


Preparation:


> Heat oil and splutter mustard

> Add chopped onion and saute' well

> Add black gram dhal and bengal gram dhal and fry till golden brown

> Add ginger, chilli and curry leaves and saute' well

> Add carrot and saute' well

> Add water, required salt and ghee and close the lid  and allow it to boil

>After boiling, add roasted rava and stir well and close the lid and cook for 2- 5 minutes ( stir in between)

> Yummy uppuma is ready, serve it hot... :-)
