Pickles are the part and parcel of
every Indian cuisine. Are you tired of making sour and bitter lemon pickle? Don’t
worry, here I am introducing a very easy and tasty recipe (without bitter taste
J),of
lemon pickle. Here is a Kerala style
recipe of lemon pickle. Let’s start preparation together …..
Lemon -10
numbers
Garlic -
1 pod
Mustard seeds -
1 tbsp
Green chilly -
2 numbers (splitted lengthwise)
Red chilly powder - 2 to 3 tbsp (as per spice
required)
Asafoetida powder -
½ tsp
Vinegar -2 tbsp
Salt -
4 tbsp
Gingelly oil/sesame oil -
2 tbsp
Curry leaves
Sugar -
2 tbsp
Preparation:
1.
Take the lemon and wash them
thoroughly.
2.
Pat dry them and steam them in a
vessel for 8 to 10 minutes (Make sure, don’t over cook them, then it will be
difficult to slice them into pieces)
3.
Remove from the flame and allow it
to cool and dry the lemon using a clean dry cloth
4.
Slice each lemon into 4 or 8
pieces as per the size of the lemon
5.
Add lengthwise chopped garlic,
green chillies and a tablespoon of salt and mix well.
6.
In a pan, heat sesame oil and
splutter the mustard seeds
7.
Lower the flame and add the chilly
powder and sauté for some seconds
8.
Add the lemon, garlic, chilly and
salt mix into the pan and mix well for sometime and switch off the flame
9.
Add asafoetida powder, sugar, and
curry leaves and mix well
10.
Add vinegar and mix well, then
adjust the salt
11.
Allow it to cool down and transfer
the pickle in to any glass bottle or jar
12.
Heat 2 tablespoon sesame oil and
allow it to cool and pour the same on the top of the pickle (to prevent
fungus formation and getting the
authentic taste) and close the bottle or jar and keep the pickle for 3 to 4 weeks,
so that it will become more tastier.
